Method
Sundried tomatoes are added to a London dry and navy strength gin, and placed in the freezer until the oil has solidified. We then fine strain with coffee filter paper for a clear liquid that is viscous, savoury and has a citrus bite.
For our Tonic Lime Cordial, we reduce Tonic water with fresh grapefruit, fresh lime, lime peels, bay leaf, pink peppercorn, sugar and citric acid.
The Papa-DAMN garnish is a lime and coriander poppadom with a home-made pineapple & red pepper chutney.
